recipe: bulgur burger



I haven't made anything that I've been very excited about for a while, but on a healthy kick, I made these bulgur veggie burgers from
Gourmet this weekend, and they were really great. I don't think it gets much healthier than a "burger" made with bulgur wheat, pinto beans, and walnuts, and this is definitely more like great falafel than a beef burger. It sounds a bit strange, I admit, but Dan and I both loved them. Especially yummy with sweet potato oven fries to dip in the lime mayo.

Bulgur Burgers with Lime Mayonnaise


1/2 cup chopped onion

Olive oil

1/2 cup bulgur

1 cup water

1 cup canned pinto beans (rinsed and drained)

1 1/2 Tbsp soy sauce

1/2 cup walnuts

2 garlic cloves

1/2 cup packed cilantro sprigs

3/4 tsp ground cumin

1/4 tsp cayenne

1/4 cup mayonnaise

1/4 tsp grated lime zest

1/2 tsp lime juice

4 slices bread toasted


Cook 1/4 cup of onion with 1/4 teaspoon salt in olive oil in a small pot over medium heat about 5 minutes. Add bulgur and water and cook, covered, over low heat until water is absorbed, about 15 minutes. Stir in beans and soy sauce and let cool slightly.

In a food processor, pulse the bulgur mixture, walnuts, garlic, cilantro, cumin, cayenne, 1/4 tsp salt, 1/2 tsp pepper, and remaining 1/4 cup onion until finely chopped. Form into 4 patties and chill at least 15 minutes. While patties chill, stir together mayonnaise, zest, and juice.

Cook the patties in olive oil in a skillet over medium heat, about 4-6 minutes on each side, flipping just once (try to leave them alone for the full 4 minutes or they may fall apart!). Serve on toast with lime mayo, lettuce, tomato, and avocado.
