recipe: roasted broccoli two ways

Apparently this is now a food blog... at least temporarily. Work has been kind of slow this month, and I've been inspired to try to find some great new recipes to add to my rotation. I've never really been a big fan of steamed broccoli, but roasted, it's a completely different animal (vegetable). We made a lemony parmesan version for Thanksgiving, and again for Christmas because it was so freaking good. Tonight, we mixed some shrimp in with the broccoli for an incredibly easy and delicious one-pan meal that definitely warrants a place in the rotation.

Roasted Broccoli with Lemon and Parmesan

Broccoli
Mushrooms (optional but really amazing)
Olive oil
Salt and pepper
Lemon, zested
Parmesan cheese, grated

Preheat oven to 400. Cut broccoli into bite-size florets. If you're adding mushrooms, halve them. Spread broccoli (and mushrooms) on a baking sheet, drizzle generously with olive oil, and sprinkle on some salt and pepper. Mix. Bake for about 15 minutes, or until the edges get brown and crispy. Remove from the oven, toss with some lemon zest and parmesan cheese, and serve.

Roasted Broccoli and Shrimp
From the New York Times

2 lb broccoli (I used about 4 small heads)
1 lb large shrimp, peeled and deveined
3 T. olive oil
1 t. cumin seeds (or 1/2 t. ground cumin)
1 t. coriander seeds (or 1/2 t. ground coriander)
1 1/2 t. kosher salt (less if you're using table salt)
1 t. pepper
1/4 t. cayenne pepper
1 1/2 t. lemon zest

Preheat oven to 425. Cut the broccoli into bite-size florets and toss with 2 T. olive oil, cumin, coriander, 1 t. kosher salt, 1/2 t. pepper, and the cayenne. Bake for 10 minutes on a baking sheet.

Meanwhile, toss the shrimp with the remaining 1 T. olive oil, 1/2 t. salt, 1/2 t. pepper, and the lemon zest. Add the shrimp to the broccoli and bake for another 7-10 minutes (just until the shrimp turn pink and are firm to the touch - no longer!). Serve with a side of rice for an easy meal.
