recipe: oatmeal pancakes

PhotobucketWe think these pancakes are awesome, and Dan doesn't even like pancakes! They're a little more substantial than regular pancakes, pretty healthy, and reheat really well. The only catch is that you have think to start them the night before, but it takes all of 30 seconds to mix together the oats and buttermilk and stash them in the fridge.

Oatmeal Pancakes
Adapted from a recipe I found online somewhere

2 cups rolled oats
2 cups buttermilk
2 eggs
4 T butter, melted and cooled
1 banana, mashed
1/2 cup flour
2 T. sugar
1 t. baking powder
1 t. baking soda
1/2 t. salt

Night before: Mix together the oats and buttermilk, cover, and refrigerate.

Day of: Take buttermilk/oats mixture out of the fridge. Beat in banana, eggs, and melted butter. Stir in flour, sugar, baking powder, baking soda, and salt. Heat a nonstick skillet to medium and brush with butter. Cook the pancakes (you know how). Serve with real maple syrup (obviously).
